Watermelon Feta Salad

Big fan of watermelon and feta in the summer. But I do feel that it often needs a little something extra like blueberries and mint or basil. This salad is often shown as a “pizza” served on top of a watermelon wedge. It looks pretty, but it’s impossible to eat that way. Trust me, just stick to salad form. 

INGREDIENTS makes 2 servings

2 cups diced watermelon

1 cup blueberries

3/4 cups crumbled up feta 

balsamic vinegar for drizzling

2 Tbs chopped basil or mint

 

INSTRUCTIONS

  • 2 cups diced watermelon
  • 1 cup blueberries
  • 3/4 cups crumbled up feta

1. Mix together the watermelon and blueberries. If serving in individual bowls split them up now. Sprinkle the feta over the top.

 

  • balsamic vinegar for drizzling
  • 2 Tbs chopped basil or mint

2. Drizzle balsamic vinegar over the salad, to taste. Sprinkle the top with the chopped basil or mint. Voila, ready to serve.
