Watermelon Cherry Cold Soup

I really love cold dessert soups. They’re great as an appetizer, dessert, or even for breakfast. And they tend to be very easy to make. I found this particular soup idea on instagram. The sage is a really interesting touch, especially with the ginger. Fresh sage does pack a punch though, so if you start chopping it, and feel a bit overwhelmed, try adding it in 1 tsp at a time so you don’t overdo it. I love the feta garnish here, but if feta tends to be a bit too sharp for you, try using a sheep milk feta. It has a more mild flavor. Also, if pitting cherries is not really your thing (takes a while), you can cheat and use frozen cherries instead.    

INGREDIENTS makes 8 servings

 

3 lbs watermelon, seeded with rind removed (about 1 mini watermelon)

1 lb fresh cherries, pitted

2 Tbs grated fresh ginger

1 Tbs fresh sage, finely chopped

1/2 cup feta or sheep milk feta, cubed (garnish)

 

INSTRUCTIONS

  • 3 lbs watermelon, seeded with rind removed
  • 1 lb fresh cherries, pitted
  • 2 Tbs grated fresh ginger
  • 1 Tbs fresh sage, finely chopped

1. Using a blender or food processor, blend together all of the ingredients except the feta. Do it in batches if necessary, or put everything in a large pot and use an immersion blender.

 

  • 1/2 cup feta or sheep milk feta, cubed

2. Chill the soup if necessary. Serve the chilled soup in small bowls and garnish with a few cubes of feta.
