Twarozek (Farmers Cheese Spread)
Twarozek is definitely a Polish breakfast staple. It’s great eaten on the side like a small salad or on top of bread like a thick spread. Farmers cheese can be scarce, so I often use cottage cheese instead, especially the small curd type. It also tastes great but is a little wetter.
INGREDIENTS makes 8-10 servings
1 lb farmers cheese or cottage cheese
1 bunch red breakfast radishes (black radishes will work too)
1 bunch chives or 1/2 bunch scallions
2 Tbs whipping cream or to taste (optional)
salt and pepper to taste

INSTRUCTIONS
- 1 lb farmers cheese or cottage cheese
- 1 bunch red breakfast radishes (black radishes will work too)

1. Dice the radishes into small peas sized cubes and slice the chives or scallions. In a large bowl mix together the radishes, chives or scallions and farmers cheese. If the mixture seems a little dry add in the whipping cream to achieve your desired consistency. It should be a little crumbly but able to hold together. Add salt and pepper to taste and serve cold.
