Jajko w Szklance (Egg In a Cup)

This simple breakfast dish is solidly a staple of my childhood. It’s a delicious way to start the day! I’ve noticed that my American friends don’t really eat soft boiled eggs, which is a terrible shame. If you haven’t given it a try, this is a nice way to ease into what you’ve been missing out on this whole time. Make sure to use good quality bread; no sandwich bread here!  

INGREDIENTS makes 1 serving

2 eggs

1/2 slice good bread (like rye, sourdough, for farmers white)

1/2 tsp butter

salt and pepper to taste

INSTRUCTIONS

  • 2 eggs

1. Place a small pot of water on the stove and bring to a boil. Gently place the eggs into the boiling water and boil for 5 min. Remove the eggs immediately and shock cool under cold running water for a minute or two.

  • 1/2 slice good bread (like rye, sourdough, for farmers white)
  • 1/2 tsp butter
  • salt and pepper to taste

2. While the eggs are boiling tear up the bread into bite sized pieces and put them in a medium glass or mug. Place the butter on top.

3. Once the eggs are shock cooled, gently peel them and place on top of the bread and butter in your glass. Mix the ingredients all together, making sure to smash up the eggs. Add salt and pepper to taste and enjoy!
