Easy Cranberry Relish

I was introduced to this relish at Thanksgiving with my husband’s family. I don’t think I know of another dish that packs this much yum, with so little work. The most important part of this relish is that you have to use fresh, not frozen, cranberries, so it really is a seasonal treat. The original recipe was in a booklet given to my mother-in-law when she went to see the cranberry harvest at a local farm. 

INGREDIENTS makes 8 servings

1 medium navel orange

1 12-oz bag fresh cranberries

1/2 cup sugar

 

INSTRUCTIONS

  • 1 medium navel orange
  • 1 12-oz bag fresh or frozen cranberries
  • 1/2 cup sugar

1. Leaving the rind on, roughly dice the orange into chunks. Combine the orange chunks, cranberries, and sugar in a food processor and process for roughly 20 – 30 seconds, until the ingredients are well mixed and the pieces are fine.

 

2. Serve the relish with poultry (Cranberry Chicken), sausages (especially chicken sausage), pierogi (especially “Holiday” Cranberry Pierogi), or in general as a small side salad / surowka.
