Corn and Ham Salad
I saw some beautiful corn ears at the market, and decided to make this filling yet refreshing salad. It’s great instead of a potato salad for summer picnics and bbq’s. I also like a small portion as breakfast. You can use canned corn or cook your own fresh corn. I like to use fresh but it’s more work and I can’t honestly say it makes much of a difference. The pickled celery is really great here. I realize it may be hard to find, but most Polish stores will have it (seler conserwowy). You can also substitute a tart apple for it, but it’s not as good. And if you’re at the Polish store already, why not pick up some Polish mayo! It taste a little different (and way better in my opinion) than standard American mayo, and it’s perfect for this salad.
INGREDIENTS makes 8 servings
1 1/2 – 2 cups corn (about 2 ears of cooked corn or 1 can of corn)
1 cup diced ham, or turkey deli meat, or chicken deli meat.
2/3 cup pickled celery (seler conserwowy), drained or 1 tart apple, diced fine
1 Tbs lemon juice
3 Tbs mayonnaise (preferably Polish mayonnaise) or more to taste
INSTRUCTIONS

1. Mix all of the ingredients. Voila!
If you want to be fancy for a garden party etc. you can layer the salad. Just be aware that it tastes better all mixed up. In a medium clear glass bowl, put down half of the corn, followed by half of the ham, followed by half of the celery. Repeat for the remaining ingredients. Evenly pour the lemon juice over the top of the salad. Spread the mayonnaise evenly over the top. The salad will keep for 2 – 3 days in the fridge.
