Carrot and Apple “Surowka” (Salad or Slaw)

I’ve never been a big fan of coleslaw, but this look-a-like carrot “surowka”, or Polish style side salad, is one of my favorites. You can serve it with just about anything, but I think it goes especially well with fish or in place of a traditional slaw.   

INGREDIENTS makes 8 servings

1/2 lb carrots, shredded on a large box grater

2 small apples, shredded on a large box grater

1 Tbs lemon juice

1 tsp sugar, or more to taste

 

INSTRUCTIONS

  • 1/2 lb carrots, shredded on a large box grater
  • 2 small apples, shredded on a large box grater
  • 1 Tbs lemon juice
  • 1 tsp sugar, or more to taste

1. Mix all of the ingredients together. The lemon juice will help the apple not to turn brown, but if it makes the salad too tart, especially if your apples are already tart, add more sugar to taste.
